Cold supper on a hot September evening

On your arrival day, you may like to have the home cooked four course evening meal we offer for 25 euros per head. Depending on the season, we use organically grown vegetables and fruit from the Pépoulie garden, as well as locally produced ingredients.

For the supper in early September in the first slide above, to accompany the local trout poached with tarragon and cream, there is potato and olive salad, tomato and basil salad, followed by melons, figs and grapes, all home grown.

A typical arrival day menu, during the summer:

Chilled homemade carrot and orange soup

Médaillons of local duck in a red wine and cream sauce
Home grown potato gratin à la dauphinoise

Local frisée lettuce in a nut oil dressing

A goat cheese made in a Puylaurens farm

Local peaches

As well as local pain de campagne, we also include in the price a carafe of the local Gaillac wine.

Other dishes, both vegetarian and non-vegetarian, that we offer at different times of the year:

ratatouille with couscous
chicken basquaise
broad beans & bacon in crème fraîche
spring lamb stew
pasta with red peppers, mushrooms & crème fraîche
crushed potatoes with pesto, olive oil and grilled peppers
fillets of duck breast in red wine with sautéed potatoes
pesto aubergines
bacon & potato gratin
quiche with leeks, peppers & feta
French black pudding with apples
lentil, bacon & shallot stew
pasta with pine nuts, courgette & ruccola
chorizo sausage with baked onions in cream
grilled figs & goat cheese, with toasted nuts
fig, pear & rosemary same-day chutney
courgette & tomato tarte

We like to cook traditional dishes that are from this region, and a favourite cookbook is Recettes paysannes du Tarn. Dishes like Saucisse de Toulouse au gaillac blanc, Aillade de Lautrec, Tomates blanches, Soupe à l'ail rose de Lautrec, Tarte au roquefort et aux noix, Salade d'aubergines.
